Malware overwriting wp-config on installation

Im coming accross a complex hack/virus/malware problem on my server.

I rent a virtual server on which for the last 10 years Ive run only one website after developing many.

This website is secured with a wp-config out of the root directory so maybe thats what saved it.

Since Covid I need to run more websites on different topics but each installation I make to the new domains causes wp-config to geto verwritten by something at first from my local computer and now seemingly from the healthy domain. I know that there are scripts running on the server causing this but it stops me fully from being able to make new site installations on the same server.
Has anybody experienced this?

The host did manage to find some malicious scripts on the server which he removed but the problem is far from over.

The original local anti malware. virus errors I received were for blacole infection errors I no longer get these so I reckon that script has been removed but I still cant make a wordpress installation without wp-config getting overwritten.

Any help or suggestions would be much appreciated as the host does not seem to be able to find the cause!
